Mussels Vodka Cranberry Chile Cream Mussels

Vodka Cranberry Chile Cream Mussels


1/2 sweet red bell pepper, julienned
1/2 sweet yellow pepper, julienned
1/2 green bell pepper, julienned
1/3 cup (75 mL) julienned red onion
1 tsp (5 mL) minced garlic
1/4 cup (60 mL) vodka
1 1/2 cups (375 mL) whipping cream
1 tsp (5 mL) sambal oelek*
Freshly ground pepper
1/4 cup (60 mL) dried cranberries
1 lb (500 g) fresh mussels


In a large skillet set over medium-high heat, sauté peppers, onion and garlic over medium high heat until soft. Add vodka, cream, sambal, cranberries and mussels. Cover and cook until mussels open completely. Discard any unopened mussels.
