Big Bruce's Focaccia with Rosemary and Black Olives

Big Bruce's Focaccia

Top a large rolled out pizza dough with extra-virgin olive oil, fresh rosemary leaves, coarse sea salt or kosher salt, and black olives pitted and cut up coarsely

Bake on oven rack adjusted to lower-middle position at 425 degrees. until focaccia bottom is golden brown and crisp,. Transfer to wire rack to cool slightly. Cut rectangular focaccia into squares or round focaccia into wedges; serve hot.


Bruce makes pizzas with sausage, pepperoni, tomato and shredded mozzarella. He will always include at least one focaccia using his home-grown rosemary.
