Curried Pineapple Salsa

- Salsas - Mango - Pineapple Curry - Fresh Fruit - - Peach - Watermelon - Ancho - Lee's Recipes -

Pineapple, fresh, chopped--2 Cups
Yellow Bell Pepper, seeded, chopped--1Each
Habañero Pepper, seeded, diced--1/2 to 2 Each
Garlic,fresh, peeled, minced--2-4 cloves
Onion, sweet, peeled, chopped--1 Each (medium) >
Lime Juice, fresh--3 Tablespoons
Orange Juice, fresh--1/4 Cup
Coriander Seed, ground--1 teaspoon
Curry Powder, sweet--1-2 Tablespoon
Salt, Kosher--to taste
White Pepper--to taste
Oil,Vegetable--2 Tablespoon

Process all ingredients till smooth in blender or processor. Serve as a dip (cold) or as a sauce (room temp) for grilled fish or poultry. Try substituting different fruits like papaya and/or mango. def@degraff.bgh.edu
