Finding good mussels in restaurants is not easy. Ideally find a restaurant which specializes in Belgian food like moules, frites,

  2. The Publican in Chicago! Very simple, but so very delicious. Mussels cooked briefly at high heat in garlic, shallots, celery, bay leaf, and chili which were simmered in melted butter.

Great Beer The selection of beers is top notch and the food is excellent, especially, the perfect double-fried frites and the moules which are wonderful, sweet, briny, fatty. Bruce and I feasted on mussels, frites and beer here in September 2011.

Moules Frites $16 (appetizer portion $9)

Heaping pots of P.E.I. mussels steamed in house-made fish stock served with grilled bread and small house Belgian frites. Here are the four versions:

  1. Echte Kriekenbier, herbed garlic butter
  2. La Chouffe, tomato, chive, roasted garlic, prosciutto
  3. Schlenkerla Rauchbier,bacon, spinach, leek, cherry tomato
  4. Victory Prima Pils, red curry, coconut milk, lime, sweet chili

Monk’s Frites $6

Hand-cut yukon gold potatoes fried golden brown, dusted with sea salt, served in a traditional Belgian paper cone with choice of two dipping sauces: McChouffe roasted garlic-asiago mayo, fresh herb mayo, creamy Wostyntje beer mustard, truffle ketchup, chipotle mayo

Mussels Steamed in Gueuze The Publican Mussels

Serves: 4
Ingredients:

1.5 lbs mussels
4 tablespoons butter (half stick)
1 bay leaf
1 clove of garlic, sliced
1 shallot, sliced
1 stalk of celery, sliced
1/4 teaspoon of chili
1/2 cup gueuze beer (lindeman's cuvee rene or substitute white wine)
juice of half a lemon
salt & pepper to taste

Directions:

  1. Over medium heat, melt one tablespoon of butter in a 3 quart saute pan
  2. Simmer the bay, garlic, shallot, celery and chili for one minute. do not color
  3. Add mussels; turn up the heat to high and stir to incorporate the ingredients
  4. Add gueuze and cover for three minutse or until all the mussels are open
  5. Add the remaining butter, lemon juice and salt & pepper
  6. Once the butter has melted, give the mussels one more stir and serve
  7. Serve the mussels with baguette and the left-over gueuze

Waterzooi, Garden City, NY on Long Island Restaurants

  4. Lucifer - buffalo style with crumbled bleu cheese, celery & carrot brunoise

  6. Creole - zesty lemon grass barbeque, roasted corn & popcorn crawfish tails
  7. Thai - spicy coconut, lemon grass & cilantro broth with grilled pineapple
